Guide Note: Shrimp Monterey is usually prepared by sauteing shrimp that have been peeled and deveined, in garlic butter, using the same method that you would use to prepare Shrimp Scampi. After the shrimp have been sauted, they are placed in a casserole dish, wine and/or broth is added to the pan juices, the juices are simmered to thicken, and poured over the shrimp in the casserole. The shrimp and juices are then covered with a layer of Monterey Jack cheese and parsley, and baked until the cheese is melted. It is usually served on pasta or rice, but variations of the recipe exist that incorporate the pasta into the casserole, simplifying last minute preparation. Shrimp Monterey can be used as a topping or filling for Nachos, Quesadillas, or Fajitas.
